Mark Ganem got his first glimpse of Columbia County when he came up from New York City to interview Spencertown artist Ellsworth Kelly for W magazine. Now, years later, he is chef and co-owner of Vico Restaurant on lower Warren Street.
Having a literary adventure lead to the kitchen is nothing new for Mr. Ganem. He mastered Italian cooking at a bed-and-breakfast near Florence, where he was planning to settle in and write a novel after giving up his job as Milan bureau chief for Women’s Wear Daily. —The Independent read more

Mark Ganem, chef-owner of Vico, graduated summa cum laude with a degree in biology from Harvard University. Although immersed in a serious course of study, Mr. Ganem found time to be part of the Harvard Lampoon, an organization presided over at that time by Conan O’Brien, now the host of Late Night with Conan O’Brien, on NBC.
Mr. Ganem and Mr. O’Brien danced on tables during the ritual lobster and champagne parties that were part of Lampoon life. They are friends to this day. Mr. O’Brien was present for the preopening party for Vico. —The Independent read more
Vico has already made a name for itself with customers for its inventive take on the cuisine of northern Italy’s Tuscany region as well as its relaxed atmosphere, which includes a deck and garden. Tuscan-inspired dining, the legacy of chef-owner Mark Ganem’s time in Italy. The result: items like fettuccine Botticelli, topped with a cream sauce, porcini mushrooms, asparagus and edible flowers, so it really does look like a work of art.
